WHere is a simplified interpretation of a beverage found on our latest menu. It's a batch prepared mix that's loaded full of flavours of the holiday season, which makes it ideal for your festive gathering. Save the extra citrus syrup you can use for brunch beverages, puddings, or for another batch of this cocktail.
The Bikini Cocktail
Makes enough for 10 guests
Ingredients for the Clementine Cordial (produces 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar
Ingredients for the Cocktail (makes 850ml, to serve 10)
400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish
Instructions
Making the Citrus Syrup: Put every ingredients in a pan, heat until it reaches a simmer, mixing to dissolve. Then, take off the burner allowing it to cool fully. Decant to a clean bottle, seal and refrigerate it in the fridge, where it will keep for up to a month.
To make Premix: Mix the specified liquid ingredients into a large bottle, leave to sit for an hour, then pass it through , ideally through cheesecloth, to ensure it's completely strained.
To serve: Add 85ml from the cocktail base into a stirring glass filled with ice, gently stirring lightly for a minute to chill. Filter to a frosted cocktail glass or a similar vessel, top with some cranberries adding the final touch by giving it a quick spritz of mandarin oil over the top.
